One of the earliest known vegetable oils is rapeseed oil. It is derived from the seeds of the rape plant, a relative of cruciferous vegetables including broccoli, Brussels sprouts, and cabbage in terms of botany. Rapeseed oil has long been used in industry as a lubricant for motors and other machine parts, but it was not thought to be safe for eating by humans (although it was occasionally added to animal feed) due to its high concentration of potentially toxic erucic acid. Rapeseed oil is appropriate for preparations at high temperatures since it mostly contains unsaturated fatty acids. Purchase only rapeseed oil that is 100 percent pure.
